Fruits d’été au cassis

Summer fruit cup with cassis

Light, bright and refreshing, this dessert may be made with whatever summer fruit happens to be available. The fruit is sliced and piled into dessert bowls at the last minute with the addition of a few mint leaves and a splash of crème de cassis. Et voilà.

The ingredients listed below are those shown in the photo. Previously I made the fruit cup with simply peaches, halved cherries and blueberries. Let your inspiration be your guide.

1 nectarine
1 fresh fig
1 handful of blueberries
1 handful of raspberries
a few fresh mint leaves
2 tbsp. crème de cassis

Rinse the fruit at the last minute. Shake dry.

Slice the nectarine and fig. Pile into dessert cups or bowls. Add the blueberries and raspberries. Sprinkle with mint leaves.

Pour the cassis over the fruit and serve. Serves 2.

If you’d like additional sweetness, add a tsp. of sugar before adding the crème de cassis — but this is really not necessary as the liqueur is quite sweet.
